Do you have a lazy meal that you make once a week? Well, today I am going to show you mine. My lazy go-to meal once a week is this Mediterranean salmon. I love this meal because it’s so easy to put together and everything is so fresh. Believe it or not, I do like to make easy, simple meals when I’m not trying to impress you guys. I am a busy mom and a full-time healthcare worker, so I too like easy meals. I know that is so hard to believe. I’ve been making this dish for years and I’ve been playing with different ingredients and I wanted to share with you guys. One of the key factors into making this dish is getting a really good piece of fish. Whenever I need fish on the go, I do always go to Publix. They have this Blue House Atlantic salmon that’s so good and it’s raised in the US, so I always buy it and I always stock up on it. And another key factor is getting a high quality single origin olive oil. It will make or break this recipe, I’m telling you. Because the first thing when you bite into this dish, you are going to taste that cucumber salad. If you don’t have a good olive oil on that cucumber salad, you might as well just throw that dish in the trash and tell whoever you making it for that I did not make it. You hear me? Do not say my name. When you’re cooking with high quality ingredients, you don’t need all that seasoning. I’m telling you, everything will taste good without it. That’s our problem these days anyway.
