If you’ve never tried grilling your salad before, you should definitely give my grilled romaine chopped salad from my first cookbook, Vegan Bullet Attack, a try. It has marinated and grilled eggplant, grilled mushrooms, grilled corn, and even the lettuce is grilled. I do add some fresh cucumber and fresh tomato to the mix to balance all of the super savory grilled flavors with some fresh summery hits. And then it includes a don nutritional yeast flavored vinegrett that’s super good, very savory for this delightful salad. Definitely serve it up at your next cookout or barbecue or even just to enjoy on any summer evening. And if you want to add more protein, go ahead and add some vegan chicken or grilled tempeh and enjoy.
