I decided to try and make my own protein bars. I have been doing good with flavor and starting to get consistency down better. This is my 2nd attempt.
One thing I want to learn more about is making a nonfat greek yogurt topping. I used Oikos Triple Zero (plain) and mixed Instant Nonfat milk to thicken it, but it needed to be frozen to become hard. I am making these without shit additives or things like that.
What can I do to make a yogurt topping that will harden in the fridge, and stay that way? Just curious to see what people do for a yogurt coating/topping of similar things.

Try using gelatin to *set* it. It won’t go hard though
Where does palm oil and soy lecithin fall on your “no additives or shit like that” list? The store bought stuff is usually yogurt powder, palm oil, and soy lecithin. You may want to consider omitting yogurt or stick to eating the yogurt by itselff, otherwise I’m not sure it’s possible to get what you’re looking for without some sort of *science*-like ingredient.
