Are these just prime ribeyes? If so, is $27/lb typically pricing? The marbling does look incredible.

These look like the Wagyu ribeye that Walmart has been selling for a few years now. Yes, they’re very good in my opinion. And they’re usually about $20 or less for the steak. So, grabbing one for myself makes for a great low cost steak dinner. They have a nice beefy flavor to them. They’re usually a bit thinner and small. So I just rip it up in the cast iron real quick. Sear a nice crust, then keep flipping it, so it doesn’t burn, until it hits my desired temp.

To clarify: they were packaged as wagyu ribeyes. The marbling looked really good so i decided to try it out

As other redditors have mentioned, you don’t need sous vide given the among of marbling on the steak.
With sous vide, a slight higher temp like 135/137 F will make better tasting steaks as higher temp properly melt/cook the fat in the steak.

Im pretty big on Walmart prime beef, dont have a costco near me and irs generally really good and 20 a pound. These look good

Steaks look like good quality. I can’t comment on Wally World as there’s only one near me and the place is trash.
I probably wouldn’t sous vide these though. With that amount of marbling, I’d be slapping those on the grill.

I have a question for anyone who can answer: I use a farm that hangs their beef for 1 week and then I typical age in my fridge for another 10 day and never an issue. I had a large Chuck roast 5lbs. Defrosted, seasoned, sealed and refrigerated as normal. But the bag had air in it so I removed resealed and doubled it. It was in fridge for 8 days. Put in Sous Vide for what was supposed to be for 30 hrs, at 128f again my normal. Last night it looked fine was submerged as should be. Just checked it and it was floating sealed bag looked like a balloon 🎈 Opened and it stinks. My knee jerk reaction is to toss it. Bear in mine, it smelled fine before I sealed it up. Thoughts?
