I threw together a salad to go with our dinner tonight and I had to share this really simple balsamic vinaigrette recipe. YUM. I have hated eating fresh tomatoes since childhood but now Iβm definitely going to be having them more often with this dressingπ
Salad is some halved constellation tomatoes, a small red onion, 1 bell pepper, 2 baby cucumbers, and 1 packet of mozzarella balls. Throw a ton of basil on there too and youβre basically done. I thought some red pepper flakes might be nice in there too next time.

balsamic vinegar transforms tomatoes. it’s also unbelievably good with fresh figs, arugula, shaved parmesan, and olive oil.
Good in-season tomatoes makes a big difference too!
Not only balsalmic vinaigrette, but also the type of tomato. I too was a lifelong tomato hater until a couple years ago when I tried grape and cherry tomatoes. I have no idea why people go with beefsteak so much, they are truly terrible tomatoes.
