We wanted to experiment a bit, used a mix of 00 flour and semolina flor to have a rougher texture, fresh eggs based pasta dough, made some knife shaped pappardelle and made a red ragú with dusk mest (never done before, just experimenting a bit but turned out great).
The final ingredient is hard aged sheep cheese, grated directly on the dish.

looks great! I was just thinking how annoying it is that I couldn’t find pappardelle at the store yesterday. This is a good reminder that I could just make some 🙂
