    The main thing to know about the knife is whether it’s single-bevel or double-bevel. It’s critical for maintaining it and if the terms are new to you, please google it.

    It says you shouldn’t cut frozen stuff or bones because it degrades knife.

    Also make sure to wipe off all moisture every time you use it (this one is from me)

    I have the same one, bought it from a department store in Akihabara. I don’t think they’re rare but a very good knife. Please learn from me and NEVER put it in the dishwasher…

  11. He cherishs your friendship. That’s a high quality knife coming from the best smith in Japan. A Japanese once told me hand-finished by the bladesmith. So they have proper QC there.

    There’s this area called Kappabashi. And there are shops that sell knife of all ranges and shapes. If you go further down the wholesale area, Niimi specifically, it has even more knife shops and kitchenware stuff. We just got a knife there.

    I’m not saying your friend got it from there, but based on price, a knife starts from $90 to $200. We got one recently and it works really well in kitchen. Handle the blade carefully, dont let it chip.
