Stunning Orzo Pasta Salad
450g Orzo Pasta : I would advise Rummo pasta , it’s the best I have found
60ml Olive Oil
3 Tbsp Red Wine Vinegar
1 Clove of Garlic (grated)
1/2 tsp Dried Oregano
1/2 tsp Dijon Mustard
Salt and pepper to taste
200g Sun Dried Tomatoes
Bunch of Fresh Parsley
1 Red Onion (Thinly Sliced)

Woke up to a lovely sunny day again here in Ireland. So, I thought we’d make a pasta salad. So, I thought I’d bring you shopping with me while we got our ingredients. Got our pasta. Awesome job, Super Value. And then raindrops keep falling on my head and just really got low Irish weather. Let me dry off and I’m going to show you how to make an amazing orzo pasta salad. So, let’s talk orzo. Orzo is a rice shaped pasta and it is absolutely amazing. It is perfect for a salad, but it is also an amazing substitute for risoto rice. Cook in salted water till al dente. Drain it. Add some olive oil to avoid the pasta sticking and then set aside to cool. For our dressing, to a bowl, add 60 mil of olive oil, 3 tablespoons of red wine vinegar, one clove of garlic, grated, half teaspoon of dried oregano, half a teaspoon of dijon mustard, some salt and pepper. Whisk until mixed. Taste and set aside. Now, we are going to chop up some sundried tomatoes. Slice some parsley and very thinly slice a red onion. Once our orzo is cooled, get all of the ingredients into the orzo pasta. Mix your dressing through. Test for seasoning. And there you have a stunning salad. I serve mine with beef tufts. Quite an alternative to Italian pasta salad, usually we just toss in some tomatoes and cheese with maybe some olivers and Artichokes, sure sounds tasty, but we don't have Dijon mustard in Italy, not in my town at least
