This is Moroccan Kefta Kebab — juicy,
spiced meat skewers bursting with bold flavor. Start with ground lamb. Add grated
onion, garlic, chopped parsley, cilantro, and mint. Season with paprika, cumin,
coriander, cinnamon, turmeric, and red pepper flakes. Add salt and a pinch of cardamom.
Mix it all together and knead like dough until the mixture is pasty and holds together.
Chill the mixture, then shape it around skewers into sausage-like kebabs. Now cook
them your way: Grill for smoky flavor, or air-fry for a lighter option. Pan-fry in
a hot skillet until golden brown. Or broil, turning once, until deeply caramelized.
