you will not believe how much this butter poached cod tasted like lobster we’re going to melt a few sticks of butter in a pot so basically we’re just clarifying this if you don’t want to do this step you could always use ghee it’s going to take a couple stages but we’re just going to really remove all of the milk solids once it gets to about there I’m just going to run it through a sie then we have our liquid gold i’m going to season the cod fillets just simply with salt and pepper on both sides pour that clarified butter into a pan with a little crushed red pepper add the cod and we’re just going to gently poach this it’s just going to simmer covered until it easily flakes with a fork this could take like 8 to 10 minutes depending upon the thickness of the cod tonight I serve this with steamed broccolini those British roast potatoes then to finish I just topped it with a little bit of homemade basil oil but look how tender and flaky that is

if you dont want to do this step (making ghee), you can always use ghee.
just tell them to make F*ckin ghee! it's not that hard! also tell them to learn to make brown butter and butter noir!
don't tell people to be lazy! especially spend more money to be lazy…
don't get me wrong, i make 3 sourdoughs a week and the time i spend on that is work time, that is my time but normally i'd tell people to go to the farmers market and find a reputable bakery… but everyone has butter, everyone has 10 mins. why spend $10+ on ghee when you can take your in house butter, clarify it and then you can reuse it!
