SCAPE SALT

Most times in the past, when I have looked for recommendations on what to make with garlic scapes, scape salt is not mentioned. But honestly, I think it's the absolute best thing to make with garlic scapes!

I chop them up nice and fine in my food processor, then mix with a lot of salt. I like to use coarse salt or kosher salt. Probably about 40% salt, 60% scapes. Then dehydrate (on parchment paper) until the mixture is completely dry and crisp. Then break it up into chunks and process again in the food processor.

I refuse to make anything other than this salt with my garlic scapes anymore! Yummmm 🤤

    That’s really cool! Did you purée them with the salt and then let the whole thing dry?

    I have a bunch of scapes in the fridge I need to see if they’re still good.
    I had so many I couldn’t use them fast enough fresh.

    I can’t eat garlic because of a FODMAPS sensitivity but I can have garlic scapes. This is a great idea for if I want to follow a recipe with garlic powder
