Air Fryer Greek Potatoes 🥔
My household has been on a potato kick lately! My husband and I have been focusing on whole foods and we have been eating every potato out there! Yellow, white, red, russet, sweet, if it’s in potato form, we’re eating it!
With that being said, with eating lots of potatoes every day, I’ve had to get creative with cooking them so we don’t get sick of them too fast 🤭
INGREDIENTS
* 300 g Yellow Potato cut in bite sized pieces, washed and drained
* 3 Tbsp Olive Oil
* 1 Tbsp Greek Seasoning
* 1/2 Fresh Lemon Squeezed
* salt if needed, to your preference!
INSTRUCTIONS
* In a bowl, add in your yellow potato and 2 Tbsp of olive oil. Toss altogether to ensure that all potato pieces are coated in oil.
* Cook in your air fryer for 20 minutes at 400F, tossing at 10 minutes.
* Once potatoes are cooked and crispy, add them back in a bowl, add the last Tbsp of olive oil, Greek seasoning and freshly squeezed lemon juice and toss!
* Serve and enjoy!

My husband and I have been on potato cake lately as our choice of carbs for our daily meals. And I had to desperately find ways to get creative with our potatoes. So today, I thought I’d show you our easy air fryer Greek potatoes. All you’ll need is potatoes of your choice. I usually like to use yellow or white. Cut them up into evenized pieces. Toss them in oil. Throw them in the air fryer at 400 for 20 minutes. Toss at 10 minutes. Take it out. Add your Greek seasoning. And add a squeeze of lemon. And they are so good. I am so addicted. I love having these every day.
