
I had some rotisserie chicken and various cheeses I needed to use up, and they all come together in a dish good enough to share! Here’s what I did, but it’s flexible and can be done with whatever you have, or whatever macros you want to hit:
3 oz rotisserie chicken
1 oz Brie cheese
1 oz goat cheese
1/2 oz grated Parmesan cheese
Italian seasoning
1 (9 oz) pouch Konjac noodles
- Drain noodles.
- Microwave noodles 5 minutes in a microwave safe bowl.
- Mash together cheese, seasoning, and chicken, shredding the chicken, in a medium soup bowl.
- Dump heated noodles with chicken and cheese mixture, and mix together.

Thank you for this! I always eat half of my rotisserie chicken and then get tired of it because I typically eat it plain. Now I can try this 😊👍
I forgot to say to remove the rind of the Brie.
