If you can get your hands on Rancho Gordo's stuff, it'll change the way you think about the humble bean.

1-2) Creamy tomato-braised beans with garlic toast: Rancho Gordo Stallard beans braised in a broth of white wine and Campari and orange cherry tomatoes; finished with cashew cream and vegan boursin.
3-4) Frijol rojo chilaquiles: Blue corn tortilla chips simmered in salsa rojo, plated over refried Rancho Gordo pinto beans and salsa verde. Topped with red onion, cilantro, and vegan crema, and served with charred tomatillos.
5-6) Corona beans and pesto: Rancho Gordo California corona beans cooked in a white wine reduction and tossed with a mustard green pesto with spring onions, pecans, cashews, sun-dried tomatoes, and artichoke hearts.

    Their beans are good but prices are eye watering.
    I was on their bean subscription thing for a few years and finally quit last year. $8ish dollars for a little bag of beans seems insane now I’ve stopped buying.

    Yessss Rancho Gordo beans! A friend got me into them, I bought several bags a while back. Those California Corona beans are SO good and substantial for a vegan main dish. All of the ones I’ve tried have had flavor and texture that, compared to their cheaper grocery store counterparts, make the price very much worth it.
