I need ideas! We have made pickles, cucumber salads, bagels with cream cheese and cucumber, Tzatziki. We have given some to neighbors and our chickens. What are some other ideas for cucumbers?

Mix w sugar and make a shaved ice or granita type thing or straight up ice cream

1- Slice them up and put them in water in your fridge. The electrolytes enter the water and give it a wonderful fresh taste. You’ll want to change daily or so. 2- Chill and mush for face masks/slice cold ones for eyes. 3- Send me some. 😉

Cucumber sandwiches, pickles, cucumber salad, I had a similar situation not long ago. Ended up giving half away to neighbors and still made 10 jars of pickles.

You can use them as you would a zucchini and make breads or muffins. Cucumber soup is delicious, too. One of my favorites is Cucumber slices with Everything Bagel seasoning. Sometimes I add cream cheese to it too.

Cucumber Gazpacho
2 large cucumbers (peeled & chopped) • 1 ripe avocado • 1 small garlic clove • 1–2 tbsp extra virgin olive oil • 1 tbsp lemon juice or white wine vinegar • ¼ cup fresh dill or mint (optional but great) • ½ cup plain Greek yogurt (or use water for a vegan version) • Salt & pepper to taste • Cold water (2–4 tbsp, for thinning as needed)
Instructions
1. Prep: Peel the cucumbers and cut into chunks. If they’re seedy, scoop out the seeds for a smoother texture. 2. Blend: Add cucumbers, avocado, garlic, lemon juice, herbs, and yogurt to a blender. Blend until smooth. 3. Adjust: Add olive oil, salt, pepper, and a little cold water if it’s too thick. Blend again. 4. Chill: Let it sit in the fridge for at least 30–60 mins to get cold and let the flavors blend. 5. Serve: Pour into bowls and drizzle with olive oil, fresh herbs, or a sprinkle of chili flakes if you want a little kick.
With the oversized ones, Christmas Pickles. They are a pain in the neck to make, but worth it in the end. It takes 12 days and pickling lime, so it does take some work.

Agua Fresca! My favorite flavor is pepino y limon (cucumber lime). Just blend cucumber, water, lime juice, and sugar. Strain and enjoy cold
