Black bean palooza- a follow up to my dried black beans post

Hello again everyone!!

A few days ago I made a post stating that I had a bag of dried black beans and that I was looking for ideas for what to do with them besides beans and rice. Everyone gave me so many great ideas, and in thinking about them, I realized that my problem with beans and rice is not that I don’t like beans and rice. My problem is that I don’t like the lack of variety that comes with having to eat a crockpot full of beans.

So to solve my problem, I decided to soak and cook my beans to about the doneness of a can of black beans and make a variety of recipes with them! So yesterday I spent all day cooking and made all of this! 3 different meals with a variety of veggies, all from a one pound bag of dried beans that cost about $1!!

This was also my first time cooking with fresh corn off the cob. It is so good, I am never buying frozen or canned corn again 😂
