I see there are two types of vegetarian broth – one is soy milk based which appears milky and the other type is more clear looking!

I do not really like soy milk based broth! Can anyone help me out with what exactly the broth in clear looking vegetarian Ramen made of?

I would really love to explore restaurants with vegan Ramen that specifically use non-soy milk based broth!

I’m attaching the picture of the best Ramen I’ve ever had in USA. It’s called Yaraku Ramen in New Jersey. That’s the kind of Ramen I like.

Is there any specific kind of restaurant I should look for?

    It’s probably just a heavily seasoned veggie or mushroom broth.

    Classic vegetarian/vegan japanese broth is a kombu and shiitake dashi.

    Most decent ramen places will offer at least one vegan dish if not more – you just need to call and ask. Non soy milk broths usually are based on miso, but the variations beyond that are endless – dashi, mushrooms, vegetables, etc.

    The broth could be a ton of different things, but a good restaurant will usually give some of that information. If it’s the “flavoring” ie salt base your after, that should be listed too. A lot of vegan ramen goes for miso as it provides a bit more body.

    I make a shojin dashi for my broth normally.

    8c water
    20g kombu
    20g dried mushrooms I do a mix of shiitake and others
    2 pinch saffron (optional)

    Let sit in fridge 24 hours.

    With a good tare this has been an amazing broth for my ramen and it’s vegan on top.
