    Buttered bun
    Kewpie mayo
    Dijon mustard
    Butter lettuce
    Season heirloom tomato
    American cheese
    Bison patty with sharp cheddar and jalapeño
    Momofuku chili crunch
    Red onion salted and soaked in ice water
    Bread and butter pickles
    Trader Joe’s black truffle aioli
    Buttered bun

  13. For me, the burgers are overcooked, and the bun overtoasted, but the tomato rocks and flavors should be great.

    Way way too thick on the red onion. Better to slice it wafer thin and pile it on if you like the flavor that much. Tomatoes look great. Good job.

    Ditch the dijon, Spicy Brown or a stone ground mustard suits me better. I don’t usually like mayo, except made from scratch. Isn’t mayo and aoili overkill? I wouldn’t even like Big Mac sauce or thousand island dressing on a burger.

    As always, onions suck. Chili oil products usually have the awful allium, so I’d also skip that. I’m not a hot sauce guy.
