




Picked up an 8 oz filet from my local butcher, I've never cooked one before. Just seasoned it with salt and pepper, seared it in a cast iron pan and butter basted it until it hit 123°F internal and let it rest, and it ended up hitting 133°F internal. I was going for a medium rare.

Gotta get that pan hotter and get better contact for a nicer crust without going over in the middle. Also dry-brining and getting that surface as dry as possible is probably the biggest key to a solid crust.
