Adam credits his mother’s excellent cooking and plenty of enjoyable family meals for his choice of career, claiming he wanted to be a chef from the age of seven.
He started at 16 with an apprenticeship at Manchester’s Bridgewater Hall, then trained in classic French cooking at Mallory Court in Leamington Spa, at the time a Michelin starred restaurant.
After a spell in Germany he developed more modern techniques under Simon Radley at the Michelin starred Chester Grosvenor.
When Simon Rogan took over The French at The Midland in Manchester he offered Adam his first Head Chef position.
Adam has embraced Simon’s style using organic and seasonal British produce and has achieved 4 AA rosettes at The French.
For the competition Adam has looked into the history of food across the years of the Queen’s reign and is using inspiration from iconic British dishes of days gone by.
