Vegan Healthy Dish with Bulgur, Lentils, and Purslane
Ingredients:
 • 1 onion, chopped
 • 2 garlic cloves, minced
 • Tomato and pepper paste (domates biber salçası)
 • 1 tomato, diced
 • 1 cup washed bulgur (pre-cooked)
 • 1 cup cooked chickpeas
 • 1 cup cooked green lentils
 • A generous handful of washed purslane
 • Butter or oil for frying
 • Chili powder
 • Paprika powder
 • Fresh mint, chopped
 • Water
 • Salt and pepper to taste
Instructions:
 1. Sauté the onion and garlic in a little oil until soft.
 2. Add the tomato and pepper paste and cook briefly. Then add the diced tomato and cook a bit more.
 3. Add the cooked bulgur, chickpeas, and lentils one by one, stirring well after each addition.
 4. Add the washed purslane, stir, and pour in a little water. Let it simmer briefly until the purslane is tender.
 5. In a separate pan, fry butter (or oil) with chili powder, paprika powder, and fresh mint over low heat for a short time.
 6. Add this spiced butter mixture to the main dish and mix well.
 7. Season with salt and pepper to taste, and serve warm.
