Here is the recipe:
Ingredients for the Chicken:
454g/ 1lb chicken breast (3 approximately)
14g/ 1 tbsp. vegetable oil (chicken)
8g/ 2 tsp garlic powder (chicken)
Salt and pepper to taste (chicken
14g/ 1 tbsp. vegetable (pan searing chicken)
Ingredients for the Salad:
282g/ 6 cups green leaf or romaine lettuce (cut into sections)
150g/ 1 cup cherry tomatoes (halved)
300g/ 2 cups avocado (diced)
Ingredients for the Salad:
113g/ 1cup sharp cheddar or pepper jack cheese
99g/ 2/3 cup red onion (thinly sliced)
113g/ 4 ounces tortilla strips or croutons (approx.)
150g/ 2/3 cup of crispy bacon bits (optional)
Ingredients for the Avocado Ranch Dressing:
150g/ 1 ripe avocado
242ml/1 cup buttermilk (or plain Greek yogurt (1 cup/280g) for a thicker version)
115g/ ½ cup of real mayonnaise
28g/ 2 tbsp. fresh lemon juice
6g/ 1.5 tsp garlic powder
6g/ 1.5 tsp onion powder
4g/ 1. tsp dill
28g/ 2 tbsp. green onion (chopped)
Salt and pepper to taste
Directions:
Chicken:
Pound chicken breasts to even thickness if necessary.
Season with olive oil, salt, pepper, and a pinch of garlic powder.
Grill over medium-high heat for 5–6 minutes per side, or until internal temp reaches 165°F (74°C).
Allow chicken to rest for 5 minutes, then slice into bite-size cubes or strips.
Set aside
Avocado Ranch Dressing:
In a blender or food processor, combine all dressing ingredients until smooth and creamy.
Adjust thickness with more buttermilk or lemon juice if needed.
Chill until ready to use.
Build the Salad:
On individual plates, layer green leaf or romaine, sliced chicken, tomatoes, avocado, red onion, and cheese.
Drizzle generously with avocado ranch dressing.
Top with crispy bacon bits.
Top with crushed tortilla strips or croutons.
Serve immediately
