    Recipe –

    Do this times 2 – 8 ounces of margarine, 8 ounces of sugar, best blth together then add 4 eggs. Beat again.. add 8 ounces of self raising flour, beat then add the juice of half a lemon and zest of a lemon. Then mix. Put in a greased cake mould, I prefer a silicone one, about 180oC and approximately 20 minutes or until its golden on top.

    When you have cooked two halves and they have completely cooled, smear one half thickly with lemon curd. Put the other half on top.

    Then pour a load of icing sugar in a big bowl, juice a lemon in and mix. Add drops of warm water and keep mixing until its the correct consistency. Pour on the cake, then spread evenly. Zest a lemon on top
