Just curious: How can the Omega-3 amount vary so much?
All King Oscar brand. From top to bottom:
Sardines in tomato sauce (4200 mg O3)
Sardines in olive oil with jalapeños (1900 mg O3)
Sardines in dijon mustard (3000 mg O3)

Maybe the fish in each can are different species or from different fisheries? Sardines can be several diff types of fish.

Top and bottom are 106g serving size and the middle is only 76g serving size, so that’s part of it. 39, 25, and 28mg of omega-3 per gram, respectively. Seed oils, as much as people turn their nose up at them are another source. The tomato and mustard may have canola oil or something instead of olive oil.

Ozone is not for eating. Maybe the hole in the ozone layer resorbed into the tomatoes but the olives do not support dooming us to solar winds so they rejected the ozone; finally the mustard has chosen to hoe the middle of the road as the intermediary condiment it always is.
That said, I looked at the ingredients and the tomato sauce has soybean oil which apparently is high in Omega-3.
The jalapeño sardines are smaller as they contain 12+ fish per can versus the 8 fish per can of the other two…maybe smaller means less fat accumulation? Further they are in olive oil which is apparently not a significant source of omega-3.
Apparently, mustard has omega-3 too.
So maybe….tomato and mustard get bump for having bigger fishes compared to the jalapeño, and then maybe the tomato gets a bigger bump for soybean oil versus mustard.
I’m not a medical doctor tho. Just a googler.

The Jalepeno is lowest because it is the only one where the serving size is drained. The other two are the full 106g, so that includes sauce. It also has the least fish as I recall, with the jalapenos taking up some space in the middle.
Dijon has no added oil, but it does have quite a lot of mustard seed solids. As I recall, there was a thick layer of that on top (they are quite mild though, not spicy), and these contain both a lot of Omega-3 and a fair bit of protein. This could explain how it has only 39% more weight vs. the jalapeno one, but 69% more Omega-3 and 15% more protein.

Some soybean oil is added for the tomato, [according to their website](https://www.kingoscar.com/product/brisling-sardines-in-zesty-tomato-sauce/), which is higher in Omega-3 than olive oil by weight. It would also contain any oil that came off the fish, not being drained.
