Absolutely LOVE pork steaks and don’t eat them enough (wife recently decided pork is the cool new thing that makes her sick…)
Also, the center grate being off is driving me nuts lol

Looks like you got a bit of grease build up. They fire shouldn’t be spitting like that that will produce a more acrid sear. You could cut back a bit on the amount of coal you use.

You shouldn’t put them directly in the fire. Soot is not tasty.

Flames should not be touching the meat, much less grease flames. Not good. Just let them close by but not over the flames.
