Feeling pretty pleased with my third try at making a boule! (Or any sourdough loaf for that matter). My friends said it was the best bread they'd ever had, but it's possible they were biased. It got a smidge more golden than I wanted – oops.

Heartwarming story time: my dad passed away 5 months ago today. His 80-year-old hospice caregiver taught me how he makes sourdough and gave me some of his starter. I texted this man photos of this loaf yesterday and he told me "I think it's time for you to give me lessons. That loaf looks fantastic. I can never get the crumbs to look like that. It looks perfect." He brought over some of his sourdough from home and it was some of the last food my dad could enjoy (or even stomach) before he passed. I ended up making my first loaf (on my own) before my final grief group meeting two months ago and gave 7 baggies of starter to all the other grief group participants.

It makes me feel a little closer to my dad to make bread from the same starter that made it into his last meals. I know he would have loved this loaf and would be gassing me up if I could send him photos of it :') Making a mental note to dry some of this starter should mine ever get moldy, I'd be so sad to not have this specific starter!

  1. I saw someone on this subreddit call the King Arthur recipe[ here](https://www.kingarthurbaking.com/recipes/no-knead-sourdough-bread-recipe) idiot proof, so that is what I used. I did use the optional diastatic malt, but only about a tsp. I also used probably about 15 more g of water than this calls for (a happy accident I think).

    I deviated a bit in that I let it BF for an extra 1.5 hour than it calls for (it looked like it needed it), then cold proofed for 17 hours before shaping and letting it sit in banneton for 1.5 hours before baking, starting in a cold dutch oven (as instructed in recipe).

    I felt like I was sort of winging it but I’m super happy with the results and hope I can replicate them!

    Love the bread and the story behind it! I am sorry for your loss, I know your dad would be so proud 👏 side question, how do you like that slicer? I’ve been thinking of buying one myself, the bread knife gets old and hard to control sometimes
