Capri potato skewers. These are your new go-to appetizer. All you’re going to do is roast up a pack of Little Potato Company’s garlic and herb potatoes at 425 with olive oil and the seasoning pack. Takes 30 to 40 minutes. While they cool, toss cherry tomatoes and mozzarella balls in a little oil and salt. Then you’re just going to skewer tomato, mozzarella, basil leaf, and a roasted potato.
