I hope this isn‘t too niche and there are other Szechuan food lovers in this sub… but it can get soooo oily. So i present my homemade Szechuan noodle soup creation!!

Olive oil is just to get the scallion fryin so you could skip and just start w the soup base and soy sauce. Add mushies, cover & let cook for like 2 min while u rinse the noods. Add in noods & tofu & let it simmer again (uncovered this time). Throw her in a bowl & munch.

I‘d recommend draining most of the sauce after cooking and adding water (to make it soup), otherwise its way too salty.

Also if you‘re new to konjac noodles definitely start w smaller portions – i eat them enough i can have a whole bowl w no digestive issues

Will make 3-4 servings if you buy all this at an asian grocery store: ~$12, including the hot pot base which is like $6. And takes maybe 10 min to cook. Easy!!
