LUBBOCK, Texas (KCBD) – Two well-known Lubbock eateries this week, each with 29 violations.
Rosa’s Cafe at 5020 Milwaukee had 29 violations.
Here’s a look at their priority violations.
Pico de gallo and salsa were above the safe cold temperature of 41°.A towel was on top of a clean plate.A dirty scraper was stored with clean utensils.An employee dropped a pan on the floor and picked it up, then returned to work without washing their hands.An employee wiped down a table, touched the trashcan and then returned to food service without washing their hands.Cleaning items were not stored correctly.Diced ham, tomatoes and tomatillo sauce had the wrong date mark.A hand sink was not being maintained. Hand sinks are for handwashing only to prevent cross contamination.An ice bucket, lids and food containers were cracked.The three compartment sink was not plumbed correctly.The facility is using an insecticide in the tortilla prep area every night for flies, but they are not following instructions on how to protect the food service surfaces and equipment from contamination.
The inspector notes due to the nature and the number of the violations, active managerial control was not observed.

At the time of arrival the back door was left open.A wet wiping towel was stored on a tray with clean towels in the tortilla prep area.Two white cutting boards being used to cover the 2-compartment food prep sink in the back prep area are being stored under the sink area between uses.Tongs stored inside an oven mitt by the tortilla machine.In the storage closet across from the mop sink two visibly soiled dusters were stored over boxes of single-service plastic ware.An open, and in-use box of plastic wrap on the prep table across from the grill had visible food debris, and a personal cell phone stored inside the box.Single-service catering pans, and cardboard packaging are stored uncovered.A bulk bin of bagged sugar, identified by PIC, did not have a label to identify the name of the food.Personal items stored on a rack over a bulk bin of sugar, backpacks stored hanging over single-service items on a rack, and a small bag of hygiene items were stored over a prep area.The vent cover over the hand sink in the main food service line was cracked.Flies were found in the tortilla prep area.
The report shows most of the violations were corrected at the time of the inspection.
Tommy’s Famous Burgers at 117 University had 29 violations.
Here’s a look at their priority violations.
The walk-in cooler was not maintaining a temperature of 41° or below.Multiple items in the walk-in cooler were above that safe cold temperature including mashed potatoes, gravy, sausage patties and hamburger patties.The reach-in cooler was also not maintaining a temperature of 41° or less.Raw eggs were stored above ready-to-eat sausage patties.Raw ground beef patties were stored over mayonnaise.The handle of a mop was leaning against the food contact service of a pair of tongs.Toxic items are not properly stored.A container of shaving cream was on a shelf above the reach in freezer.Employees washed their hands in the three compartment sink. Handwashing must be done in the hand sink to prevent cross contamination.There were no paper towels in the men’s or women’s restroom.Black tape was used to repair the sliding door on the reach in freezer.
The report notes, due to the number in the nature of the violations active managerial control was not observed.
