Moroccan-Style Fish
Ingredients:
• 1 red bell pepper, cut into thick strips
• 1 carrot, cut into thick strips
• 1 potato, cut into large cubes
• ½ head of garlic, peeled
• 1 spicy green pepper
• 1 spicy red pepper
• 1 dried chili pepper
• 1 tomato, thickly sliced
• A handful of fresh cilantro
• 2 tbsp sweet paprika
• Salt, to taste
• Black pepper, to taste
• ½ tsp turmeric
• 4 tbsp olive oil (for frying)
• ¼ cup olive oil (for sauce)
• Boiling water

Instructions:
1. Heat a pan with 4 tbsp of olive oil.
2. Sauté all the vegetables together (add the tomato last) and season with salt.
3. Fry for about 10 minutes.
4. In a separate bowl, mix ¼ cup olive oil, 2 tbsp sweet paprika, ½ tsp turmeric, salt, and pepper. Add boiling water and stir well.
5. After 10 minutes of frying, add the spice mixture to the pan along with a handful of fresh cilantro. Cook until the vegetables soften.
6. Add 2 fish fillets (I used fresh sea bass) that were previously marinated in lemon and salt. Place thin slices of lemon on top.
7. Cook for another 15 minutes and sprinkle with more fresh cilantro before serving.
