Chicken Thighs
Bell Pepper

Juicy grilled chicken and sweet caramelized pineapple. These chicken pineapple skewers are your new summer obsession. Let’s fire up the grill cuz today we’re making chicken pineapple skewers. And trust me, they disappear fast. Cut up a bell pepper and cut it into cubes. Make sure you have some pineapple Ready? And then cut up an onion. and put all the vegetables on a skewer. For this, I used three chicken thighs. You can use more if needed. Out of all the ingredients I’ve shown, I got about four skewers with a little bit left over. Now for the super secret sauce. Just kidding. It’s sweet baby rays and pineapple juice. I don’t ever mix this to any specific ratio. I just add a little bit of each, mix it up, and taste it. Just go ahead and do this to your liking. And I pour it over my cubed up chicken. And I let it sit in the fridge for 30 minutes, but you can go a little bit longer if you want. Then throw the chicken on a skewer and head out to the grill. Cook the vegetables and pineapple as long as you guys want. Some of us like it a little bit more done, some of us don’t. I’m not judging. Just make sure the chicken’s cooked all the way through. I had this on for between 10 and 15 minutes. As long as the chicken’s heated up over 165°, you’re going to be good. Put on some more of the barbecue sauce we made earlier. This is going to help the flavor a ton. Make sure this isn’t the same sauce that touched the raw chicken. Once everything was done, I went inside and assembled these onto their own skewers. Some people might think it’s strange that I cook these differently and put them onto different skewers, but I do it cuz I like my peppers, onions, everything grilled a little bit different.
