Fried Zucchini Pasta ❤️

I read once that this was @stanleytucci favorite pasta! and I knew I wanted to try it! But with my take it on it slightly!

So hear you go!

Makes 2 –
Thinly slice 3 zucchini’s and fry them in some oil till golden brown.

Meanwhile, boil around 170g of spaghetti and reserve about 1/2 cup of pasta water.

Now in a cold pan, add 4-5 smashed garlic cloves along with 1 tbsp unsalted butter or olive oil and let it heat on low till it’s infused.

Now add 90 percent of the zucchini slices, pasta water and let the zucchini soften. You can break it up a bit.

Now add 3 tbsp of cheese of your choice. I used regular processed cheese (1 1/2 cube Amul cheese) and mix it in, till you get a smooth sauce.

Remember: the pasta water is salty, so is the cheese. So don’t add any more salt. And DO NOT salt the zucchini. You can add a little milk to cut down the salt if you like.

Mix in the pasta, pepper and chilli flakes.

Garnish with the fried zucchini and enjoy hottttt.

i can’t stop cooking pasta with every ingredient and vegetable I have at home so today let’s make some yummy zucchini pasta and honestly this recipe isn’t rocket science all you need to do is heat up some oil and fry your zucchini pieces once they’re golden or brownish you can drain them and keep them aside on a paper towel now in a cold pan add four to five smashed garlic cloves along with 1 tbsp oil of butter and let it cook on a low flame once the oil is infused with garlic add your zucchini keep some aside and add your reserved pasta cooking water cook for a while till the zucchini is a little bit softened up add a little bit of cheese and mix it in till the sauce is nice and creamy finally add the pasta red pepper flakes and some pepper since the pasta water is salty don’t add any additional salt to the pasta the zucchini and enjoy
