Recipe Details: 4-6 servings
1 large head romaine lettuce, chopped
1 large tomato, diced
3 Persian cucumbers, quartered
½ large green pepper, chopped
5 radishes, sliced
2 green onions, sliced
¼ cup chopped parsley
1 large double-ply pita bread, cut into triangles
3 tbsp olive oil (for frying pita)
Salt & pepper to taste
Dressings:
3 tbsp olive oil
2 tbsp lemon juice
2 garlic cloves, pressed or grated, (optional)
1 tsp sumac
1 tsp pomegranate molasses
½ tsp dried mint
½ tsp salt
Black pepper to taste
Instructions
[1] Make the dressing: Whisk lemon juice, garlic, sumac, pomegranate molasses, dried mint, salt, and pepper. Slowly stream in olive oil while whisking until emulsified.
[2] Fry the pita: Heat olive oil in a skillet over medium heat. Add pita pieces, season with salt and pepper, and fry until golden and crispy (about 5–7 minutes). You can also just toast in the oven.
[3] Assemble the salad: In a large bowl, combine all chopped vegetables and herbs.
[4] Dress and toss: Pour dressing over the salad and toss to coat.
[5] Add pita: Mix in crispy pita right before serving to keep it crunch
