Finally have my process down pretty well.

Weigh out meat and put in my seasonings and some Lea and Perrins worst at a 1 lb to 10-12g and 10.5 ml respectively ratio.

Weigh the total and divide by number of patties (I prefer 130g to 140g)

Cut a bunch of squares of parchment paper and put each ball on its own square.

Smash them down into a patty shape with the bottom of a plate

And then I grilled them on a gas grill with SS grates that’s taken a little getting used to from the Cast iron grates. Add cheese if needed at the end.
I butter the buns and then toast on the top rack. Inside you add your own toppings.

  4. I also like to add a little bit of garlic powder and onion powder to the seasoning mix for extra flavor. Sometimes I’ll experiment with different types of cheese or toppings to switch things up.
