
Looking to make mango ice cream, and came across this recipe. It calls for 250g of cream cheese? I’ve made jenis base before but that just has 3 tbsp… any suggestions or experience w cream cheese based ice cream?
Or if anyone has a different recipe they love pls share! 🙂

Ice cream calc says this is too much sugar and will be very soft. I have done cream cheese at more like 11% (half package for 1 qt / kg). Also recently did a peach recipe that would be similar to mango. Combining them I came up with below recipe. I pretty much always use skim milk powder to offset significant water content of something like fruit.

Cream cheese (34.4%) 113
Sugar 140
Skim milk powder (1%) 46
Vanilla extract 6

“Hello my name is“ recipe I use (and I’m pretty sure I just cut a 1/3rd of the 250g block and tosses the rest in… and then may or may not mix the rest with powdered sugar and eat with spoon… 😭)
not sure what mango adds for sugar though, so WIZMO64 is probably spot on with 113g
-150g or 3/4 cup of cream cheese
* 250g or 1 1/4 cups of cream
* 400g or 2 cups of milk
* 150g or 3/4 cup of sugar
* 50g or 1/4 cup of glucose syrup (can also just add additional 50g of sugar)
* texture agent of choice (I typically use 1/4 tsp of commercial stabilizer)
