This really hits the spot for me when I am wfh (Fridays) and it is fast enough to prepare that I can squeeze prep in between meeting. 150-170 calories, and around 30g protein. Liquid egg whites, arugula, diced red onion, diced mini rainbow peppers, and crumbled fat-free feta.
I weigh the feta and egg whites, and I just log what I measure that day, which is why I gave the calories as a range. The amount of egg whites I use is roughly 12 tbls by volume, 4X serving.
I think any green would work, but I am partial to arugula.
I use fat-free feta because I love feta, and also, you don’t really sacrifice flavor and texture with feta when you go fat-free. You still get the tangy briny feta taste, and the crumbles help it distribute very well.

This looks amazing
It really pleasantly surprised me that per calorie feta has more protein than eggs. I’ve felt weirdly guilty the last few weeks about not eating enough eggs but now I feel better knowing they’re not this protein behemoth. Thanks OP 💕
