Day 40 of 90 Italian Summer Recipes! La Dolce Vita Series! This Mediterranean Dish is alive and well! Welcome to a taste of the Greek Islands! I love our Greek cousins and I honor them with this amazing Greek Island lemon, garlic , oregano blend of pure perfection! This trio is the beginning a perfecly balanced dish! Protein packed and full of antioxidants with the extra virgin olive oil, the garlic, alot of fresh squeezed lemon and herbs!
Ingredients!
10 to 14 pieces of high quality very fresh chicken! I am using an amish brand I love from our local Italian grocery store!

Soak half hour the chicken pieces in a bowl with cold water, tsp salt and one fresh lemon squeezed with rind .

Drain, pat chicken dry

5 Russet or golden potatoes, remove skin and cut into even chuncks
Cut one whole fresh onion into long slices

Prepare the Marinade blend:
with a Wisk blend together 2/3 cup olive oil, 1/2 cup lemon juice, 4 minced garlic cloves , salt and pepper, 1 tsp. paparika, 1/2 tsp garlic powder, pinch red pepper flakes crushed

Assembly: In a baking dish, put a little marinade at the bottom and coat the bottom of the pan with it.
Drop in the potatoes then the onions on the bottom

Place the chicken onto of them evenly distributed.

Pour the Marinade of fresh lemon juice, evoo, and garlic, oregano herbs over the chicken, then use your clean hands to massage and evenly distribute the mixture all over the chicken and potaotes.

Heat over to 400 degrees and place baking rack in center of oven! Allow to bake for 30 minutes, then add 1/2 cup drained fire roasted potatoes for a little flavor and color. Add 1/2 cup white wine, toss into the cooking chicken!
cover with foil for 30 more minutes. Then take out of oven turn the potatoes and let cook uncovered for 10 more minutes until it looks golden brown! Remove and serve!
