If you hate zucchini, you might just suck at cooking it. Let me show you how to make the best buttery grilled zucchini you’ve had in your life. You’re going to start by chopping the ends off your zucchini, then slice it down the middle. Now, you want to take your knife and score your zucchini in a cross-hatch pattern. This will help the seasonings penetrate deeper down for better flavor. Plus, it makes it look pretty. Now, the next step is to dry brine your zucchini. You’re going to sprinkle on a little bit of salt. This salt is going to help pull the moisture out of the vegetable and keep it from getting soggy on the grill. You’re going to pop it in the fridge for about an hour and you’ll see all that moisture that got pulled out of the zucchini. You can just wipe that away with a paper towel. Then just season it up with a little of your favorite Cajun seasoning and fire up the grill to mediumigh heat. You’re going to place it on the grates with the cut side down and let it grill for about 5 minutes. Then give it a flip and let it cook for 5 minutes more. Once it’s got some nice grill marks on both sides, you can transfer it to an aluminum pan and top it with about 1/4 cup of butter. You’re going to let it grill for about 10 minutes more. And you can use a brush to brush on that butter to get it into all those nooks and crannies. Then you can pull it off, serve it up, and dig into this delicious, buttery Cajun grilled zucchini.
