Wanted an easy dinner that didn’t make a bunch of dirty dishes. The NYT Orzo Salad recipe for this requirement and was 5/5! The only modification I made was to reduce the olive oil from 1/2 cup to 1/4 cup, which was more than enough to coat the salad. Kept the RWV the same. Could add some chicken breast to up the protein, and/pr some greens to up the fiber. Just finished with dinner and can’t wait to have leftovers for lunch tomorrow. It will be even better once the flavors marinade in the fridge over night. Fresh, crunchy, tangy, deliciousness. Enjoy!

This looks so yum. I wonder if it would be nice with day-old brown rice, which would increase the fibre content 🤔
