Dark red is soft and mushy and then it’s pink and firmer. What does this mean? Smells okay. Is it okay to cook

If you don’t want it, freeze it and mail it to me. I’ll eat it.

It’s fine, just cook it. It’ll be ok🙂

If it doesn’t smell like death, and isn’t green, it’s fine.

Smells okay looks okay. This is a sirloin tip, might need some marinating just FYI.

Did you have it lying on its side? The blood or juices probably just pooled there

The softer meat, muscles will likely be more tender, the lighter colored and firmer are likely to be more tough and drier.

Normal and is caused by myoglobin concentration (blood cells) typically you won’t notice any difference in taste or really even texture once cooked.

The near purple meat on the left is how most meat we get back from slaughter looks. The stores have to jack with it to keep it edible and red. But deep red/purple is normal for freshly slaughtered.

Smells ok, tender, looks good… Toss it

The cut of meat in this case makes a difference. Note there are two to three distinct pieces. Within this piece. They have different colors right out of the bag so to speak as you are cutting them. Look up sirloin tip or peeled knuckle merchandising cuts.

It means that you unfortunately bought a sirloin tip in steak form. Sorry for your loss.
However the colouring looks normal to me, i have seen thousands of these come in looking exactly like pictured once cut up.

Didn’t seek the bag well and the lighter side of as towards the zip would be my guess.
