Got a great deal on this Picanha at my local butcher!

Typically I'm a pretty bad cook. Dry-brined in the fridge for a couple of hours. Let it get to room temp then reverse seared at 225° with a probe. Pulled it out at 123° and it went right into a hot pan for the sear. Lowered the temp after the sear, put in minced garlic and butter. Basted until my gut said to take it off. Rested for awhile while I made some rice and green beans. Really pleased with the results.

Any tips to elevate this further?

Now I just need to learn how to make some good side dishes!

  3. Steak looks great. Take the beans and cut them in half on the bias then sauté in minced garlic and diced onions.

    Follow up question.

    I devoured like 2/3rds of this Picanha and can’t eat another bite. How do I reheat this tomorrow without cooking it further? Stick the probe back in and put it in the oven at a low temp?

  6. What sort of pan did you do the sear in? I’ve been having much better luck with stainless steel than cast iron of late, so curious about that part.
