Used to love a reverse sear, if I had the time. Jess Pryles had a JKF method (just keep flipping). 500-600° grill and set a timer for 60 sec. Flip and rotate 90°. I pull them about 10° below desired temp.
A lot of people poo on grill marks and say you’re not getting enough maillard reaction or whatever. I think that’s silly. You still get all the maillard reaction on a grill trying to achieve grill marks and you also get some of the most appetizing looking lines. You perfected those grills marks man. Nice job
