Today I’m sharing a super easy pineapple upside down cake. This is an old Betty Crocker recipe and it’s so good. Spray a 9 by13 casserole dish and do not skip this or the cake won’t come out. Place a 1/4 cup of butter in the center. Then transfer this to the oven while it preheats to 350ยฐ. While that’s in the oven, we’re going to make our batter. You need a box of pineapple supreme cake mix. If you can’t find the pineapple supreme, you could just use yellow cake mix instead. And we’re going to add in half a cup of vegetable oil, 1 cup of pineapple juice, three large eggs, and one cup of fully drained crushed pineapple, which is a 20 oz can. Whisk that all together. All right, our butter is melted and we’re just going to kind of swirl it around a little bit. And then we’re going to top this with a cup of brown sugar. Lay eight pineapple rings in a single layer and place marishino cherries inside the holes and around the pineapple slices. It should look like this. Evenly pour your batter over the top. This bakes at 350 for 45 minutes or until a tester in the center comes out clean. This is done baking. Now we’re going to let this stand for 45 minutes. Run a dull knife around the edges to loosen it. Now comes the tricky part. We need to invert it onto a cutting board or serving tray. Okay. Yay. You can certainly enjoy this as is, but it’s so perfect with a scoop of vanilla ice cream. You can cut this into smaller pieces and not be greedy like me. Yummy.

  7. I was born in 1969 and this is the pineapple upsidedown cake my mother has always made. She's always uses the yellow cake mix though.

  9. I have been making this for years with yellow cake mix. Itโ€™s great for folks that want a dessert without the super sweet frosting like American buttercream. Still sweet but not overly so.

  12. ๐Ÿ‘ I don't put crushed pineapples in the batter but everything else is the same way that I do it. ๐Ÿ˜ I'm not a cake eater per se as I prefer pie but this is my go-to cake when I do make one. ๐Ÿคค

  13. If you are looking to change it up, a delicious variation of this is adding pecans. My grandma used to put the cherries in the middle of the pineapple rings AND add chopped pecans in the empty areas. Ooooh. The pecans became a little caramelized and so heavenly.
