That’s really beautiful. Great job. Next, if you haven’t already and can find one, try a coulotte, also called pichana. Almost the same as a tri tip but even better.

I saw our local grocery had tri tip, but those they had available on the shelf seemed rather small. I don’t recall how much they were per pound….I bought Baby Back ribs instead….if i had known that I could have a good pink medium rare look…I might have gotten it.
