Bruschetta

This doesn’t really need a reel, but it’s more of a reminder that you can make a delicious light meal with a handful of ingredients

The quantities are going to vary, but I’d recommend two slices of toasted bread per person. I love tomatoes so I went heavy with them.

🔪 grab as many tomatoes as you want. I went for two different varieties. Chop them up. This doesn’t need to be exact. Infact, having different sizes makes it more interesting. Add to a bowl and season with salt. Mix with your hands and give a very gentle squeeze.

🔪 slice a nice country style loaf, don’t be shy with the thickness. Grill on both sides until golden. Rub one side with a peeled garlic glove

🔪 top the side of the toasted bread that’s been rubbed with garlic with tomatoes, drizzle on some juice from the bowl. Season with black pepper. Drizzle on some extra virgin olive oil.

🔪 if you want, serve with some dressed rocket and mozzarella

This one’s so easy I shouldn’t really be doing a reel on it, but it’s a reminder that using a handful of ingredients, prepping it well, you get a really tasty meal. Today, we’re cooking bruschetta or is it brusqueta? I don’t know. But let’s get into it. Get as many tomatoes as you want and chop. Get the tomatoes in a bowl. Season with salt. Get your hand in there. Mix it up. Give it a really gentle squeeze. Slice up some decent bread. A nice country loaf would do the trick. Grill it till you get some nice color and then rub it with a peeled garlic clove. I’ve dressed a plate with rocket, but you don’t have to. Drizzled with balsamic glaze. Add your toasted bread on top. Top with your tomatoes. Drizzle on some of the remaining tomato juice from your bowl. Season with black pepper. Drizzle on some extra virgin olive oil. I’ve torn up some buffalo mozzarella and added that to my bruschetta. Drizzle on some more balsamic glaze. And there you have a beautiful light summer lunch or dinner. Bruschetta.
