I cut the backs out of these, and throwed them in the crockpot overnight for soup base.

I used Meat Church Gospel, Blues Hog Tennessee Red, and hickory wood.

    For me, when your family raised chickens for Tyson, chicken is always what’s for dinner. At least till the steer grandpa held back was ready for slaughter. But seriously, when you have hundreds of thousands of chickens old enough for sale and Tyson is making you hold them till the market is better. It ain’t hard to go grab a few and get em cleaned and fire up the smoke while the meat bleeds in the cooler.

    Leg quarters are the best. I’ll buy them and debone them when I need boneless skinless dark meat. The bones get saved for stock and the skin for schmaltz.

    I’ve never seen this product before. Is it in the frozen section?

    ETA making the homemade bone broth with the discarded chicken parts is the best move there is. If you’ve got an instant pot it goes way faster.

    Beef is stupid RN. Walmart crap brisket were $78 bucks today. Tri tip was $36.

    I’m not paying that kind of money for Walmart meat. No freaking way.

    Braise them, season up the broth and add some extra wide egg noodles. Makes a good hearty chicken noodle soup! A nice warm broth, noodles and a chicken thigh per bowl is 👌🏻 add two thighs per bowl for your carnivores!

    How did you get your chicken quarters so dark? I always shoot for that texture but mine come out relatively crispy but not dark colored like that in a pellet smoker

    Pork is still fairly reasonable – a 7.5 lb pork butt gave my small family four meals, and there was still some to spare (lost the remainder during a 3-day power outage 🙁 )

    Here’s a warning. Beef is going to get worse. Canada is exporting to China instead of us and US farmers are getting killed on fertilizer and feed right now. All of my clients who raise cattle say they’re probably going to skip their herds for 2026

    I can never find quarters that aren’t just hacked to shit by the manufacturer. Every piece has like half of the pelvis still attached and just random jagged bone fragments. It takes more time to cut around all the mess to make it worth it.
