



Just a cute little piece of wagyu. Fell apart a little. Reverse sear – brought it up then flipped it into cast iron for 2mins/side then kissed the grill. Topped with an egg yolk cured in soy/mirin/rice vinegar/brown sugar and chives from the garden. The shiitakes disappeared because they smelt kinda like sour beer, so I did the gai lan with red onion in miso garlic butter and blistered the shisitos next to the steak on the iron. What do we think?

We tried the yolk on beef in Japan. Somehow it made the steak taste even beefier?!? Amazing
