Tried an onion tart that blew me away. Does anyone a recipes for something like this?
Had this at a restaurant while traveling in France (La Terrasse Provençale) and it was mind blowing – returned a few days later to have it again.
Has anyone made anything like this? Can’t seem to find a recipe that delivers this texture.

Yes I have taken tarts like this to sharing picnics or get-togethers after concerts. Ordinary pastry shell, home made is better, bake blind. Caramelised onions, do it in your slow cooker forever with a tiny bit of brown sugar and splash of balsamic vinegar. Add salt and pepper. For interest try soy sauce. Add enough beaten egg for it to gel. Bake at the heat you normally bake average things at. It will slice once cooled.

I have made onion pies, but that looks denser and less sloppy.

Try a classic French onion soup recipe and just reduce the amount of liquid.
