Creamy Cauliflower Soup
 Ingredients :
 • 2 cauliflower heads, chopped
 • 2 sweet onions, chopped
 • 8 stalks celery, chopped
 • 1 cup parsley, minced
 • enough chicken broth to cover one to 2 inches below the top of the cauliflower.
 • 1/4 cup of garlic, minced
 • 1 cup heavy cream
 • 4 cups, cheddar cheese, grated
 • garlic salt and pepper, to taste
Directions :
 1. And a large pot over medium heat, simmer, cauliflower, onions, garlic, celery, and parsley and chicken broth until soft.
 2. Add the heavy cream, cheese, salt, and pepper to taste. Then using an immersion blender, blend until desired consistency.
 * be careful not to overheat the soup once the cream and cheese are added
 ** The soup will thicken as it cools.
My name is Diane Linderman and today I’m going to be making cream and cauliflower soup. I’ve got hundreds of recipes in all my cookbooks. You’ll have to check them out. But this recipe is so beautiful and simple. Everything I make takes about 15 minutes. So, let’s get started. First thing I did was put two heads of cauliflower in this pot. This is called Better Than Bullion. I love it. And they do have the organic one. So, this is what I do to salt this. I don’t put any salt in it. This is just cauliflower for right now. Here’s what all the flavor comes from. This is parsley, onions, celery. Now, I can use all this rest of the stuff later. So, we’re going to boil this till the whole entire pot is translucent. Then, the best part comes. I’m going to take my hand blender, going to mix it up. We’re going to add cream and cheese. And this is going to be a one pot meal that your family will love. All right. Now that this has been boiling for about 25 minutes, everything looks like it’s translucent. Ready for the next step. Are you ready? This is the easiest part of all. We’re going to take sharp cheddar cheese. Probably about two cups. Of course, cream. Okay, here’s the best part right here. Take my favorite blender of all. We are going to turn this into a cream of soup. So easy. These things are amazing. Okay, it’s almost there. Look at that. How quick that is. Yummy. I would say we’re getting close to the end here. You want to take You can have it. You can even leave little chunks or you can allow it to be very, very creamy just depending on your desire. All right, time to take a quick taste, which is the best part. Oh my gosh, that is delicious. All right, ready to spoon it up. Time for lunch. Just one little tip. It will get thicker as it cools.
