I am taking care of my mum these days after she had a minor stroke that has left her unable to cook. Living alone, someone had to step up and that was me.

I never really explored cooking or baking, until now. Turns out I may have a talent for it.

My mum is shocked, and so is the rest of the family who she keeps telling that I am a really good cook. In fact, she told me she thinks my sister in law is jealous. I find it quite hilarious. 😂

I've never seen my mum eat so much. Which motives me to do my best as she can use all the nutrition she can get to help her recovery. Which is going really great according to the therapist. With a little luck she'll be self-reliant again in a couple of months. Thankfully it was only a minor stroke. Regardless of mum's recovery, I look forward to keep cooking and baking for her just not full-time.

I also discovered that I really enjoy cooking and baking, and don't mind being a bit adventurous about it.

Anyway, this is a desert I put together. It was very tasy.

    I would suggest you pipe the mousse with a tip of your choice to avoid unsightly views and comments, and it will elevate the dish. Good job though! Keep it up

    I would not imagine that chocolate mousse (or ice cream) would complement a lemon cake. Like I’m sure it would taste good because of the sugar, but not as much as a lemon drizzle or even powdered sugar.
